At Vins de Taller, the harvest starts at the beginning of August. We check the development of the grapes daily, their sugar concentration, their acidity and their health, and once they reach optimum phenolic and organoleptic maturity, it is time to start the harvest. The grapes are harvested at dawn, and placed in 20kg boxes in order to preserve their structure and qualities as much as possible. Keeping the grapes fresh and intact is of vital importance in guaranteeing the essence of their aroma. We use refrigerated transportation that keeps the grapes below 10ºC in order to avoid any possible microbiological alteration, which at the same time gives us the opportunity to carry out pre-fermentation macerations to extract the primary aromas of the fruit without danger of oxidation.
