Variety: 100% Merlot (14%vol).
Production: Pre-fermentation cold maceration for few hours. Fermentation at a controlled temperature with a daily pumping and stomping over the wine during the early stages of the fermentation. After a maceration of about 18 days, the wine is bled by the force of gravity in order to extract the best quality wine. Briefly aged for six months in used French oak barrels.
Tasting notes: Clear purple color. On the nose it has red forest fruits aromas with hints of balsamic and spices aromas. In mouth it is alive with full body and pleasant finish. Well balanced wine with along finish, still developing. To be served at 16º to 18ºC. Long.
Pairing: Rice dishes, small game, poultry, pasta.
