Variety: Cortese (16 - 17% vol).
Production: Over-ripening of grapes on the vine. Fermentation at a controlled temperature until stopping the process with alcohol. Followed by 4 months of ageing in cognac barrels. It has aromas of over-ripe white fruit, nuts, honey and raisins. Full-bodied, warm and round. Lingering finish, largely of nuts and brandy.
Pairing: Sweets, desserts, foie.
