Variety: Syrah (14% vol).
Production: Controlled-temperature fermentation. After a fifteen-day maceration the tank is saignéed and only the highest quality wine is obtained. Three-month aging in used French oak barrels. It’s a wine with a young character, aromas of berries such as raspberry and a light touch of liquorice. It’s soft, velvety and lasting wine.
Tasting notes: Deep cherry color with violet rim. Young character with aromas of berries such as raspberries and hints of liquorice. Intense, balanced and with a pleasant aftertaste.
Pairing: Xató (a Catalan red-pepper sauce), duck with plum or red fruit jam, poulard.
